Traditionally, the real J\u00e9sus de Lyon was made before Christmas, using the best casing and the best parts from the best pig. It’s made to be enjoyed amongst family, and it has a coarse mincing and a diameter of 10cm. It hasn\u2019t been stringed, but it\u2019s swathed in its casing and netting just like a newborn..<\/p>\n
